The Sous Chef - Outlets is responsible for overseeing the
culinary operation of all food and beverage outlets of our full
service property according to Hyatt & Davidson standards. Complete
daily food requisition and oversee specials utilizing any build-up
of overstock. Assist in the responsibility to select, train,
supervise, develop, discipline and counsel employees in accordance
with company policies and procedures. Communicates daily with the
Executive Chef for an update regarding planning, staffing and
Anticipate revenue/cost problems and report discrepancies to
Executive Chef and F&B Director.
Assist with scheduling, training & management of culinary &
Analyze financial and operating information on an ongoing basis
in order to adjust labor, supplies, materials and other costs to
Follow controls for food purchasing, receiving, storage,
Communicate daily with the Executive Chef for an update
regarding planning, staffing, and internal procedures.
Communicate directly with Outlet manager guest count, special
request and timing of reservations to attain highest guest
Assist with banquet functions as needed.
College degree or certification in culinary field/hospitality
Minimum 2 years kitchen management experience in both a la carte
& banquet operations strongly preferred.
Minimum 5 years cooking experience.
Ability to communicate effectively with Team Members, vendors &
guests; verbal & written communication skills equally
Ability to develop, lead & motivate culinary & stewarding
Ability to understand financial goals and accomplish them.
Ability to work extended hours when business necessitates.
